To make this baked cod fillet dish, start by preparing the bread coating: in a small bowl pour the breadcrumbs, the thyme, the grated zest of an untreated lemon and the flaked almonds.
Now for the cod fillets: remove any bones with kitchen tweezers, to check for them stroke the fillets with your hands to feel where they are. For 4 people: 400g of Cod fillet 45g of Breadcrumbs ½ the Zest of a lemon 15g of Flaked almonds 3 sprigs of Thyme 40g of Extra virgin olive oil Salt and Black pepper to tasteArrange the fillets in a bowl, drizzle with half the olive oil and cover with the previously prepared almond breadcrumb coating, and season with salt and pepper.
Turn the fillets so that the breadcrumbs stick to each side.
Now take a baking dish, sprinkle the bottom with the remaining olive oil and lay the breaded cod fillets inside.
Now to cook them: put the fillets into a preheated oven at 200 degrees for 15-20 minutes or until the fillets form a crunchy crust on the surface. When ready, remove the baking dish from the oven and serve the baked cod fillets hot.
