Tub Gurnard sailor's recipe

1.6 kg of tub gurnard
well ripened tomatoes
olive oil
salt and pepper
white wine
Finely chop an onion and brown it in a pan, then add the fish.
Drizzle over the white wine and let it evaporate.
Add the tomato slices, salt, pepper and a little water and simmer over a low heat for about 30 minutes.
