Serves 2 people:
2 big zucchini
3 tablespoon of olive oil
6 peeled, cleaned, raw prawn 
1 finely minced clove of garlic 
1 teaspoon of finely grated lemon rind  
1 teaspoon of finely minced red chili pepper (remove the seeds if you don’t want the pasta to be too hot)
2 tablespoon of lemon juice
A little handful of rocket
60 g grated parmesan (facultative)
Marine salt and black pepper just grinded
You can use a spiralizer in order to prepare spaghetti with zucchini, otherwise, if you prefer “spaghetti” or “tagliatelle” to capture the taste, then cut them by hand. Anyway do what is easier for you, you can also prepare them and leave them in the fridge for the whole day until it’s time to cook them. Bring a big pot of water to a boil. Cook the tagliatelle with zucchini for 1 minute then remove and drain them.Heat some oil over a medium heat in a big pan, add some prawns, garlic, lemon rind and chili pepper and cook until the prawns will have changed their colour. Add some drained spaghetti with zucchini and stir to mix, add some lemon juice, rocket, grated parmesan and a pinch of salt and pepper, then serve right away.
